In bed I was reading a great book on Bermondsey Life just after the last war and came across this recipe:

Traditional Beef Pie (an east end favourite )
Ingredients:
400grms lean minced beef
400grams puff pastry
1 lge Onion chopped
2tbsp oil
2tbsp flour
1tsp English mustard powder
300ml Bitter
dash of worcestershire sauce
beaten egg to glaze.
Method:
Preheat oven to 425oF
Brown mince and onion cook 2 minutes.
Stir in flour and mustard then add the bitter and worcestershire sauce, cover simmer 20 minutes.
Line pastry dish and turn cooled stew into dish top with pastry brushed with the beaten egg, trim add a steam hole.
Bake at 425oF for 20 minutes or until pie is golden.
Serve with mash potatoes and Parsley Sauce.
Delving into the freezer and dumping the plastic bags in the bath to defrost overnight.
So, no bitter and the defrosted meat revealed itself to be Pork! QED:……..
Rise n Shine Pie:
Ingredients:
400grms lean cubed Pork
Half x 1 Chorizo
400grams puff pastry
1 lge Onion chopped
2tbsp oil
2tbsp flour
1tsp English mustard powder
300ml Stella
20ml Apple juice
dash of worcestershire sauce
100grms frozen veg.
fresh thyme.
beaten egg to glaze.

Now, it's interesting that there is no mention of salt or pepper in the original recipe.
It's like ruddy Victoria station round here, I keep shouting 'it's juma, p*** off……..
