Coconut and mango cheescake
For dessert tonight as we are having friends over I am making this - it is so delicious and different - I just make plain vanilla cheesecake but whip te cream and add some coconut (fine) before putting on the base.
i then make a coulis with frozen mango bits - done in microwave until soft add sugar and puree, then just drizzle coulis over plates before serving - simple but special

It was wonderful - although I do say so myself!! Oh and I forgot to mention that I also add a dash of malibu to the mix - I use low fat philadelphia and cream - crushed ginger and digestives for the base. I always whip it till its very light before adding malibu and coconut.
Almost as good as chocolate mousse 
I don't have a plan......so nothing can go wrong!
