Now many restaurants are ageing meat up to 200 days or even more. It's become a fad.
I have been playing with this for some time, setting aside a fridge solely for this purpose.
You can do individual steaks or better still sections of meat, spice them up first as well, the longest steak I have aged is 28 days and will cook it tonight having first marinaded it in olive oil & red wine….

Oh! Almost forgot, Why ? Well: Their Meats' like their Mary Jane it's ok but they just don't love it or treat it right.
