Cantelopes

Cantelope melons are back in season!
I bought some today, 3Le a kilo. I got some of the medium grapefruit size ones as the bigger ones are a bit much for one person. For a change I had one for lunch. This is what I did:
Cut the melon in half and removed the seeds. Parr the melon from the skin for ease of consumption.
Open a tin of anchovies and select 3 fillets and sliced them up finely, chop a dozen or so capers finely and added this with the anchovies to two or three generous tablespoons of President smoked cheese [the one that comes in the jar] combined this well and filled the dimples left from the deseeding, a squeeze of lemon juice over the top and grab a spoon!
Would work great as a starter or push the boat out and have two halves for lunch like I did with some crusty bread!
