Egyptian potato and tomato dish recipe

Hi,
I've searched the archives but couldn't find a recipe for that lovely dish you get with Egyptian meals sometimes, it's sliced potatoes with a tomato sauce and I think onions. Does anyone know how to make it Egyptian style?

Hi Jo there is also Garlic in it, I have never tried to make it myself but I know what recipe you are talking about, as far as I am lead to belief you just do the onions tomatoes and garlic in a pan and pour it over your cooked potatoes. :P

Oh, this is an easy, peasy dish and ever so delicious!

There are a few ways of making it:

1. Roughly chop 2 onions and a few cloves of garlic. Brown them in some oil.
2. Whizz 4 or 5 large tomatoes and a tbsp of tomato puree and 1 spoon of sugar in a food processor. Add to the onions & garlic.

3. Once the sauce is reduced, add your potatoes (1kg) - then add a couple of ladels of stock and turn the heat down until the potatoes are cooked.

4. You can then transfer the dish under the grill until it's nicely browned on top.



The *traditional* Egyptian way of doing this dish is to prepare all the ingredients and pop everything in an uncovered tray in a medium oven for a couple of hours.

Delish!!!

You can also add some meat done the Egyptian way (ie. boiled for a couple of hours, then fried, if you're doing it the first way. Just add it to the dish with the cooked potatoes when popping it under the grill.

Great thanks Will and Countessa might give it a whirl next week. It's one of my favourites and currently craving anything with a tomato base!

Jo you might want to increase the amount of tomato paste because UK tomatoes lack the rich flavour of our Egyptian ones.

Yum, one of my favourite dishes as well.

Thanks Barry was thinking that actually, nothing beats Luxor toms for flavour. I find the more expensive vine plums here come close ish but are so expensive for cooking with.

Tinned plum tomatoes would probably be a tastier substitute in the UK Jo :)

I make mine exactly the same as Countessa but I fry some mince off and add that and I literally leave it to simmer on a low heat all day.

I always make rice to go with it.I fry some vermicilla pasta in a little olive oil and then add rinsed basmatic rice and some chicken stock.

You just can't beat the taste of home grown organic tomatoes we had a load this year......I should have turned red by now!! Also did some cherry ones which were really lush :P :P :P
