FISH..........again.
Its not often I come down here in the basement, but I need a little advise, as my cooking skills are nil.
I do like fish,and have always been taught that if the cooked fish breaks in lines - then its fresh. If it 'crumbles' - then it was previously frozen.
I ask because of some comments made upstairs by Dr Who, who I am sure knows his stuff in this field. I often would go to Zam Zam's on the WB, and I have tried the new one in the village by the Port, but getting the stuff fresh from the Red Sea every day ?

I was being serious, I even investigated the idea myself went to the fish-market in Hurgharda at 5am, checking all the various options but left feeling a little deflated as most the fish look like overgrown goldfish or carp and knowing the aesthetics of food and the buying public decided ex-pats aren't happy eating pretty looking fish, unlike hake, cod, plaice, sole or haddock. But the idea was a good idea...

JJ's fish is brought from port on the Red Sea the day it is caught, transported directly to Luxor in styrene boxes of ice then immediately frozen upon arrival. It is always firm and delightfully cooked. If the fish you have had elsewhere is greyish and flakey it has most likely been thawed and refrozen.
