Buffalo Jibna Plus

Post by drwho »

Just received my bi-weekly delivery of cheese from next door, as it was becoming boring I reshaped it with Virgin oil and added crushed sea-salt, peppercorns, chillis, dry-garlic,coriander,paprika,dry parsley, mustard seeds and some smoke essence which I have in abundance (USA import) shaped it in the freezer 30 minutes and by God does it help the Stella and Sauvignon slip down nicely, 5 stars... 8)

Used to do that with the ordinary feta that you buy in the supermarket but just used olive oil and shatta then used aysh baladi to dip into it. :P :P :P

Sorry HP, but that isn't tickling my taste buds as much as Dr Who's recipe!

Is that Gibna 'Arish you've got your hands on there DrWho?? (Don't know how they pronounce it down there, maybe jibna Karish or jibna Garish - someone help me out here! They sort of wrap it in a reed mat so it looks like a roll with markings on it, often gets translated as cottage cheese but never resembles that lumpy stuff that I think of as cottage cheese)

If he means Liquid Smoke, it looks like worcestershire sauce but has a smokey flavor.

That's the stuff PR I bought a case of 12 bottles months ago, and the buffalo next door 'maisie's cheese is very similar to cottage cheese I'll try mixing it with yogurt next time as well..8)

Well when you run out, if you need more, let me know and I'll send some over to somebody in the UK who's coming out.

It's also good for adding to a meat mariade before grilling. And a smokey cheddar dip.
