Lamb ala Jane

I have just eaten the most delic scrummy, low carb, totally ok for diabetics meal
Get some lamb shanks form arkwrights, put on to cook in slow cooker with balsamic vinegar and rosemary; get called out by guests so leave just as you are about to serve 5 hours later; Drink beer with guests another 4 hours
Return starving cut up courgettes in to strips fry in olive oil and garlic and chilli both in olive oil in a jar from arkwright's.
Stir fry for as long as you last, you are starving
serve with plenty of lemon juice over both lamb (which is now crispy) and courgettes
to die for, all avilable in luxor and easy
Stuff yourself

Courgettes are wonderful low carb food, you can make them into noodles, spaghetti or even just a vegetable

How do you make them into spaghetti or noodles? Are you referring to the strips?

It is all about how you cut them you can do tagliatelle as well. For noodles I cut them into 2 inch lengths then stand them on the end and cut as thin as I can one way and then the other. I got the idea from a diabetic forum. One lady uses a mandolin to cut hers

I use a potato peeler to cut my courgettes into strips - works really well.

That is actually a very good idea for diabetics. Probably cheaper than pasta these days too!

Well this diabetic forum advocates low carb and without going into masses of details using their advice I have halved my insulin, my bg is down by 2/3, I have lost 5lbs. Pretty strong evidence
and the things you can do with courgettes
also cauliflower as rice
they even did a low carb version of Iftar for me at the family house the other night

I've got a good recipe for a carrot sauce that is good for those who suffer from heartburn eating tomatoes.

I don't have fixed amounts, but I usually start with 2 or 3 carrots (American sized) and a stalk or two of celery, a small onion (can be green onion too) and a few cloves of garlic. Put them all in the food processor and chop fine. Then you saute them a bit in some oil or butter for a few minutes. Then add broth of your choice (can be made from bullion) along with some cumin and coriander or other spices of your choice, and a couple of tablespoons of vinegar to taste. A few dashes of hot sauce is optional. You want to make sure there is more broth than you want to end up with as you are going to boil/simmer it until the vegetables are soft and it is thickened to the consistency of the kind of tomato sauce you would put on spaghetti. You can add water as necessary. This can be served over pasta.
Anyway, gotta go finish preparing iftar!
