Trying to stay away from red meat..... canyou give me some ideas to make chicken interesting?????

I love to make roasted chicken with garlic and fresh coriander (cilantro). I just make a paste from coriander and garlic, add some black pepper and salt and stuff it under the skin and inside the chicken. Then take a tablespoon of tomato paste, spoonful of lime and little salt and rub the chicken with a paste to get nice dark color.

Try chicken fillets battered and coated with crushed corn flakes. Bake at 400 for 20 min. Better than KFC!!!!
