it's sponge soaked in rum sandwiched together with apricot jam with royal icing on the top. It used to be made with the leftover scraps of cake after baking so it was often different colours but now it made with marbled cake (fresh). Don't know why it's called russian cake though

Having read about Twinkies cakes I was very dissapointed by the one that I bought for a friends birthday a couple of years ago, and as for the price - well let's just say it cost more than it should have. Have now found a cake shop in Luxor in a more hidden place - hope I can find it again - that I much prefer.
