The packet stuff is ok if you just use it as a base and doctor it up a bit because they're really skimpy on the nuts and coconut. To make it richer pour some cream on top before you bob it in the oven.
Use any nuts and spices you find in the spice shop and play around with it.
It's best if freshly made.

[face=Comic Sans MS]I didn't realise I had a recipe for um Ali or Ymm'Ali (fruit cake) as it says in my book.

I prefer the look of this one as I the choice of nuts are more to my taste and I've always thought of Um Ali as being a more almond flavoured dish although I've no reason for that.[/face]
Ymm'Ali - serves 4

320g/16sheets of phylla dough (or very thin flake pastry)
60g/2oz Raisins
100g/4oz shelled almonds
100g/4oz shelled pistacho nuts
Honey
Cardamon
Ground cinnamon
Heavy cream, milk
75g/3oz Sugar
Olive oil

- Place the sheets of dough on a baking sheet, separating them with slightly greased oven paper and bake at 170 deg C/340 deg F for 15 mins.
When they are crisp, crumble then into an oven dish alternating with the raisins, and the chopped almonds and pistachio nuts.

- Over a low flame, combine 1 glass cream, 2 glasses of milk, the sugar, 1 tablespoon ground cardamon and 2 tablespoons honey.

- Heat the mixture to the boil and then pour it over the contents of the baking dish, sprinkle with ground cinnamon and bake at 220 degC/425 degF for 10 minutes. Serve immediately.

[face=Comic Sans MS]So Scott, a few more ideas so that you can add or omit one or other ingredient and find your own personal favourite. Enjoy experimenting.[/face]

More and more Um Ali--please

Post by MParsons »

I had Um Ali my first trip...and I don' think I had it again until my fourth trip. But the second one was slightly different from the first, because they were two different places.

That and Basmoussa are my favorite desserts.

I have yet though to try making them at home. I will have to do so.
