This is one of my favourite quick snacks ,I don't have a name for it, concocted it by accident when my vegan brother popped by unexpectedly.
chop 1 onion ,2 cloves of garlic, fry lightly, add 1 tin chopped toms bring to boil ,add cup of red split lentils ( no need to soak )cook for 20 mins ,add small tin butter beans ,warm thro', add some torn up basil serve straight away with chunks of bread
One of my families favourite quickies that I do is....
chop up a tin of corned beef and put in frying pan with a knob of butter with Garlic and onions then add tom puree, tin of toms, tin of baked beans and a good dash of Lea 'n perrins and salt and pepper. It's yum and lovely on jacket potatoes.
A quickish dish I do is fry onions garlic celery carrots, potatoes, broccoli or courgettes in oil, add a tin of tomatoes, red lentils a tin of kidney beans, and veg stock a dash of paprika or chilli powder and cook while making a few dumplings to add and allow to simmer 15 mins. Very good and sustaining on a cold winters day
Right, I've collected Glyphdoctor's tasty Ramadan quick meals from the Clocks thread (I'll be using them all year!), so are there any other ideas for single meals that can be prepared just as easily...
