Right, I've collected Glyphdoctor's tasty Ramadan quick meals from the Clocks thread (I'll be using them all year!), so are there any other ideas for single meals that can be prepared just as easily and quickly (no tuna salad, please)? I'm still getting M&S Simply Food withdrawal symptoms after 18 months.

Chicken panee is quick & painless:

- Get a pack of chicken breasts and slice each one horizontally
- Take a kitchen mallet and flatten them (the fun part!)
- Whizz up 4 onions and squeeze the juice from them into a deep container and add the juice of 2 lemons
- put the chicken breasts into the onion & lemon juice and leave for an hour
- add 2 beaten eggs to the mix
- prepare a plate of breadcrumbs (biscomat) and add a pack of Spysy
- take the chicken, coat with breadcrumbs and deep fry until golden

Also, macaroni bechamel is really simple to make, but in 3 stages (each one taking around 10 mins):

Stage 1:

Bechamel Sauce

- Put some milk in a pan to heat (I like to add some onion / bay leaves / cardamom )
- Heat a little oil in another pan and add about 5 tbsp flour to make a roux
- Add the hot milk little by little until you have a smooth sauce
- Set aside to cool - once cooled add 2 whisked eggs

Mince mixture:

- Fry 1kg of minced beef with 2 finely chopped onions
- Add 2 whizzed tomatoes and a sachet of tomato puree
- I also like to add some dried mint but that's optional!
- Stir gently until the sauce is reduced and set aside

Pasta:

- Boil 2 bags of penne pasta until soft & tender

The putting together bit:

- Coat the base of a large tray with biscomat
- Put 1/3 of the bechamel sauce into the pasta and stir
- Layer half of the pasta on the bottom of the tray
- Spread the mince mixture over the pasta
- Add the remainder of the pasta
- Spread over the remainder of the bechamel sauce
- Sprinkle the top with biscomat and drizzle with oil
- Bake at Gas 6 for around an hour until golden

(Goes very nicely with the panee and salad)

They sound very tasty – something I could do without clutching Delia Smith in one hand! Thanks; they're copied into the recipe file.

However, if you cook the quantity of macaroni bechamel in that recipe I think you will be inviting all your friends round to help you eat it! lol

Not before trying it out first! I have my eye on portion control there; otherwise the chickens on the roof opposite could get very fat :lol:
