I've stopped peeling my potatoes and leave the skins on because most of the vitamins in a potato are in the skin. If they are particularly dirty, I soak them in a water a bit to make it easier to scrub all the dirt off of them.
Actually to be perfectly honest I rarely eat potatoes cause don't really like 'em but I'd never ever seen this before and my gf sent it to be as a 'tip' on how to make potato salad cooking easier. I thought it was a GREAT idea! AND yes Glyph the 'skins' ARE where all the vitamins are so probably more important to eat them than toss 'em.
I used to do mega canning and pickle making when I was young and in my prime and beetroot, slipping the skins off tomatoes, peaches was done by this basic method.
If this works and allows for sitting to read the next chapter of the latest book I'm all for it!
