dead easy to make yourself just boil beetroot till soft then peel,slice put into jars and cover with vinegar.

Or you could try beetroot crisps! Delicious - you just thinly slice the beetrots and fry them then let 'em cool lovely with salad or I grate celeriac and mix with horseradish sauce and serve with the beetroot crisps makes an interesting starter
...

mmmm... I love vegetable crisps, you can make them with carrots and parsnips too.
