How do you say oregano and thyme, please?

Oregano ---- Za'atar barree (Arabic)
Thyme ---- Za'atar (Arabic)

Be carefull the Egyptian Word for Thyme and Oregano is the same, so use the pure Arabic for Oregano shown above. Have you not got them growing in your back garden?

Thanks, RS! At home, yes, but here no, is a rented villa. While my husband's English is excellent, there are words such as this he has not had the occasion to use previously, so cannot help me with a new recipe I will make for him.

You generally find that some of the herbs we get in the Western World are not available here in Luxor at all, things like Fennel, great with Sea Bass, and a herb they call Rehann which in Egyptian terms is Basil, but there is a strong difference between what we know as Basil and Rehann. Incidently don't ask for Basil as you will get onions!!!

Other herbs not available are tings like Tarragon and Rosemary. If you want these you need to get the seeds from someone visiting Luxor and grow them in pots in your garden/terrace they make beautiful fragrances.
