Aged Meats...

I remember going to Smith's Top Floor ( John Torode's ) with Bruce & Nick and having steaks they were £35quid each and 35 days aged.
Now many restaurants are ageing meat up to 200 days or even more. It's become a fad.
I have been playing with this for some time, setting aside a fridge solely for this purpose.
You can do individual steaks or better still sections of meat, spice them up first as well, the longest steak I have aged is 28 days and will cook it tonight having first marinaded it in olive oil & red wine…. :cool:

Oh! Almost forgot, Why ? Well: Their Meats' like their Mary Jane it's ok but they just don't love it or treat it right.

I used to raise all our meat, vegetables and fruit (organically).

Properly fed, and most importantly properly killed and stored meat that has been in the cooler for just a couple of days to be thoroughly chilled before butchering doesn't actually need to be decomposed, beaten or marinaded.

Marinades and sauces are fun occasionally or for the easily bored, but the meat doesn't need it.

I used to like a thick blue steak, 2 minutes either side on the grill mmmmmm. I gave some to a neighbour who was amazed - he said it was the first time he didn't need a knife to eat a steak - could cut it with a fork. Yum.

Well it does in this country as you should know, the slaughtering and care of meat here is abysmal… :cool:

Each to their own Doctor, but I'd rather eat veggies than rotten meat.

£35 for a steak? There's a lot of clichés one could use about this, but enjoy it if that's what pleases you.

I have just enjoyed a Bacon and black pudding bap, ( with HP sauce )

it's age ? Less than 10 minutes... :cg

Also got my haircut, no 5 on top and no 3 on the sides and back, and my boss wanted to know where I had been.

Why is Curry so popular ? It originated to disguise the decomposing meat and as to the French 'saucier creating such wonderful sauces again to disguise the meat, that's why the French in their 'frenchness call us 'Beefsteks' it's a compliment on our Beef.

Interesting article, but like MD says, once my meat has lost its feet, its ready to eat. :eat Resurrection may have suited JC but not Dusak. Pretty pointless exercise over here I would of thought, giving all the power cuts.

It's like asking why my accompaniment is Heston Blumental's 'thrice cooked chips ? Why bother ?
Dead simple…. they taste better….and that's science…so no arguments it's the same with the meat these days your supermarket meat is electrocuted to release the muscles and pumped full of water to con you, qed it's not… it's called 'cooking… :cool:
Ps: Remember! the 60's when you all started drinking 'blue nun & mateus rose and hated garlic, well We (the catering industry ) have dragged you lot up to dining out feeling posh and of course taking your money.

I wasn't in the catering industry but I had my wine direct from Schloss Johannisberger and Schloss Boekelheim Mmmmm eventually I couldn't get the Boekelheim because Sainsbury bought the lot and sold it for umpteen times the price. :x

I had a vet for a husband and he had thrice cooked everything quite often when he didn't turn up on time for his meal. So we discovered the joys of thrice cooked chips before Heston was a twinkle in his mother's eye. I'd never serve single cooked chips ugh.

By the way I've discovered a restaurant called Passion in Santa Eulalia Ibiza which serves amazing fine cut sweet potato chips - fantastic! The only thing that I willingly eat that's salted. :eat

Last time I had a grade1, my missus nearly had a heart attack..

Let me explain.. :cool:

Years ago, I was working nights, and my mate brought in his clippers and felled my golden locks down to a grade 1.
I had to reduce the size if my cap by pulling it in 2 notches..

I came home, snuggled down in the quilt and went to sleep.

When my wife woke up maybe half an hour later, all she saw was a Quote-end-Quote "Bovver Boy" head in the bed.


Being married to me has been anything but boring for her, with some amazing surprises thrown in from time to time... :cg

Anyhow, my barber is right outside the old Cavern club in Liverpool. Not too far to walk, but 10 quid. !!!
Its half that price in Wales.. :br

I'm now a very lucky man, I have a wonderful hair cutter that can use the electric grass clippers most professionally while having the knack of massaging the scalp at the same time. :up I now always pre-load it with a number one just to stretch it out longer. :up :up Cost? Well, thats another story...

I got up very late this morning, came down stairs and briefly looked in the mirror in the hall.
Jesus ! I had completely forgotten about yesterday's haircut... :o

12 years old, but the lines on my face tell me the vehicle is ageing faster than my mind.

Being a kid is great :up They even let me drive cars and do grown up stuff. :br


So, today I will be planting my African marigold seedlings, taking the grandchildren out in my car somewhere interesting, then go up to my mates house tonight for a catch up natter, bacon bap, cup of coffee, and spin some yarns by the fireside while contemplating the meaning of life over a spliff or 2 :mrgreen:

Now I remember why I cried when I first heard Puff the Magic dragon, Ironically while I was in primary school...

I recycled a leftover bolti into a British fish pie today. Pretty good getting two meals out of a single fish and it was tasty as well.
