Interesting article.
My recent visits to Morocco have put me back in touch (probably a little more than I'm really ready for) with the 'Nose to Tail' practice of eating. It makes good nutritional sense apart from anything else. In theory it should also make good financial sense but I somehow don't think it will when it appears on a London menu!

All the World's top Chef's have a 'funday at St John's annually, last time I was asked to exit stage left as deemed 'a ligger...
