New Years Turkey

Whist giving up! trying to watch Kieth Floyd cooking a mouel&cockle bisque on the mumbles shoreline below Laugharne where I used to visit for the Laugharne weekend which is a very pissy, very foodie,very arty, very Welsh type festival get together…….
I thought I would tell you my recipe for:
New Years Turkey

1 turkey medium sized from er next door
wash and hang for 7 days.
Make a large brine from the Duck soup from yesterday
chopped onion carrot apple
big pan emerse turkey
1 bottle sherherazade white
1 bunch tyme
bring to a simmer and simmer.
do this this 2 times letting it cool whist, one tastes the ongoing never-ending Mulled Wine.
Chill the brined & dried Turkey, keeping the liquid for another amazing soup extravaganza later.
Strain half the fruit from the mulled wine probably a kilo's worth, mix with fresh breadcrumbs or crushed 'hobnobs, .bit of salt & pepper. Stuff your Bird.

Cook in hot oven and I mean hot in a tray containing a couple of cups of the brine.
I spray over a mist of premade oil, mix marinade now and again.
Knock up a gravy serve with the usual whatever...
God knows what it will taste like, probably bloody amazing, but by then hopefully I will be past caring, but I very much doubt it… :cool:
Now back to another sunny day in paradise…...
Ps: As Flloyd once said about the public and cooking was "first we should teach the b*****ds to eat, sod teaching them to cook.

Alternative is to buy one from local supermarket all washed,trimmed,plucked and prepared..wrap it in tinfoil and throw it in the oven!Drink the mulled wine and watch re-runs of the amazing "Jimmy Shand"and his accordion whilst it's cooking.
Never mind the "gobble,gobble"they're all going "cheep"here cos it's after Christmas!
Bit fed up with it now,been eating it since Christmas Day.
Time for the steak pie here.Big roll of brisket,unrolled,chopped up and soaked in "Guinness."Slow cooked in oven with beef links,onions and carrots.Topped with pastry and served with boiled marrowfat peas and mash.Hearty,thick lentil soup for starters,the kind that "sticks to the ribs"Sherry trifle for dessert,then black bun and shortbread with the coffee.
Scottish fare..wonderful.
