Coconut and mango cheescake

For dessert tonight as we are having friends over I am making this - it is so delicious and different - I just make plain vanilla cheesecake but whip te cream and add some coconut (fine) before putting on the base.
i then make a coulis with frozen mango bits - done in microwave until soft add sugar and puree, then just drizzle coulis over plates before serving - simple but special :P :P :P


I don't have a plan......so nothing can go wrong!

That sounds so nice! What creamed cheese do you use when making your cheese cake? I used quark last time and although everyone ate it I didnt enjoy it as it seemed.... I dont know what it seemed but it wasnt right!

It was wonderful - although I do say so myself!! Oh and I forgot to mention that I also add a dash of malibu to the mix - I use low fat philadelphia and cream - crushed ginger and digestives for the base. I always whip it till its very light before adding malibu and coconut. :P :P :P Almost as good as chocolate mousse ;)

Thanks Ill have to try it with philadelphia and cream and see what its like, mind you after getting on the scales this morning maybe I shouldnt!!

Ooooh that sounds fab Jewel. Now I've never made a cheesecake before so I need the entire recipe please!!! ;)
