I yam uncertain of the best way to cook these so any idea's?
I know I can just treat them like ordinary spuds but there must be some other things that work well with them. I though about mashing them with carrots or adding cabbage for a sort of exotic bubble 'n squeek

[face=Comic Sans MS]They are very good roasted with mediteranean type veg = - courgettes, peppers, tomatoes, mushrooms etc. Cut the veg in to similar sized pieces, place into a plastic bag and pour over a tiny bit of olive oil, shake bag ( this means all the pieces get covered but aren't swimming in oil). Roast. You could add some sprigs of fresh herbs too eg oregano, marjoram etc.
A Japanese way is to cut them into small pieces, boil until soft and then cover in honey or a sugar solution. When I tasted the honey one it reminded me of the old fashioned toffee apples. Too sweet for me but interesting, a bit like the pudding menu in a Chinese restaurant. You could also ask Anita for ideas .[/face]

[face=Comic Sans MS]Just remembered - the first time I had yam was from a road side stall in Niger. There were cut and fried a bit like chips, but not in a deep fat fryer, more like a wok depth, and then sprinkled with salt - yummy! At least I thought they were at the time, I'll have to give them a go sometime. [/face]
